Betsy's Pork Float
- Salt Pork
- 2 Onions
- 6 Potatoes
- 1 Can of Tomotoes
- 1 Can of Crush Corn
Take a hunk of salt pork, cut it into small pieces and fry in a pan to get the grease out. Brown and set aside. Then cut and fry 2 large onions in pork fat. Cook 6 large potatoes, diced, 1 can of tomatoes, cut up, and 1 can crushed corn. Cook until potatoes are tender. Add the browned salt pork and onion; then season to taste with salt and pepper. Bring to a boil. Make dough as you would for biscuits and spoon into the pork stew to make dumplings. Keep covered and boil slowly for about 10 minutes, or until dumplings are done.
