Gooseberry Jam
- Gooseberries 3 lb slightly under-ripe, stemmed and washed
- Water - 1 pint
- Cane Sugar - 3 lb
- Butter - 1/4 oz
Gently simmer gooseberries and water for about 30 minutes until really soft and reduced. Pulp with a wooden spoon or potato masher.
Remove from the heat and add the sugar to the fruit pulp.
Stir until dissolved then add butter.
Bring to the boil and boil rapidly for about 10 minutes. Stir to keep from scorching.
When the setting point is reached, take the pan off the heat and skim the surface with a slotted spoon.
Pour into freshly boiled jars and seal.
