Barbara's Webster County Fried Chicken

1. 1 cut-up frying chicken
2. 1 cup sifted flour
3. 2 teaspoon salt
4. 0.5 teaspoon pepper
5. Lard

Combine flour, salt, and pepper. Sprinkle additional salt over the chicken. Roll pieces of the chicken in the flour mixture. Melt a few tablespoons of lard in a heavy frying pan. Add the chicken, cover the pan, and fry slowly. Brown the chicken on both sides, then turn the heat to low and continue to cook until the chicken can be easily pierced with a fork.
